Crayfish Similar to lobster but much smaller, the tender taste of this shellfish has fans the world over. The American species was introduced to China for farming purposes in the 1920s, and as a consequence, escapees of the species developed in Chinese fresh water lakes and rivers. Over 350 of the world’s approximately 500 species live in the streams and lakes of the United States.
